MAKAN-MAKAN: TAUHU BERGEDIL RECIPE

Hello everyone! 
For today's entry, I would like to share a special recipe of my favorite food which is Tauhu bergedil.

Tauhu bergedil or bergedil tauhu goreng is fried tofu stuffed with potato.



U can add the filling with vegetables, minced chicken or beef. This recipe is so special for its condiment which is SAMBAL KICAP! 
Tasty sambal kicap will make this menu A++. 
For me, sambal kicap is a great pair with tauhu bergedil :). 




I once sold tauhu bergedil before this and alhamdulillah for first time selling, I managed to receive orders for 200++ pieces. 
That was the first and last time I sell tauhu bergedil
Selling tauhu bergedil is somehow tiring and required a lot of time because I am a fussy cooker especially when I have to cook to others.😝 I stopped selling after that.
Some of my friends did ask me to sell tauhu bergedil again.
Sorry but I'm retired😂.


Let's jump to the recipe, shall we?

Tauhu bergedil
*This recipe is for 1 packet of tofu puffs. (25 tofu approximately)*

   Ingredients: 
- Tofu puffs (1 packet)

- 500 gram or 3 normal sized potatoes, steamed and mashed
- 2 tbsp finely chopped Chinese celery (daun sup)
- 2 tbsp chopped red chili
- 2 tbsp fried shallots
- 1 tsp salt or to taste
- 1 tsp white pepper (preferred Aji Shio) or to taste

-2 eggs, beaten
-1/2 tbsp flour / cornflour

    Method: 
1. Prepare the tofu puffs. Make diagonal slits on one side of the tofu puffs and carefully remove the insides to create a hollow (add what is removed into the mixture, if you wish. I do not prefer to mix it together). Set aside.

2. Mix the rest of the ingredients (except egg) together and stuff into the hollowed tofu puffs. Always taste the mixture and add anything less.

3. Heat oil for deep frying in a pan.

4. Beat the eggs with some flour (TIPS FOR CRUNCHY TOFU)

5. Dip the stuffed tofu puffs into the beaten egg and drop it into the hot oil. Fry in batches until golden brown. 

6. Drain on paper towels and serve immediately with sambal kicap.

Sambal kicap 

   Ingredients
- 5 cloves garlic
- 10-12 green chilies 
   (useful tips ratio for garlic and chilies 1:2)
- 1 1/2 cup kicap lemak manis JALEN / any kicap manis brand. 
- 1 tbsp sugar or to taste

    Method:
1. Sangai garlic and chilies in the pan until both are lightly browned. (Sangai is sauteing without oil)

3. Transfer the chilies and garlic into a blender (or you can pound it) and add sweet soy sauce. Blend.

4. Cook sambal kicap in a pan until slightly boiling. 

5. Pour the sambal kicap into a bowl or into a bottle for storage.
